Sorry if this is super obvious, but I recently sold some US shares from my NISA and now have $ in my account, how do I change this to yen to withdraw the cash?

I've never withdrawn, only deposited, but looking at this page it would appear you need a Sumishin SBI Net Ginko account with foreign currencies that's linked to your SBI account.

I've never used SBI, but I think this section of the 出金 page might allow you to change dollars to yen?

It's too late now for this transaction obviously, but you do have the option of selling in yen or in dollars when you enter the order.

Best way if you have an SBI bank account is to send it to your bank account, and convert it in the bank for ¥0.03 per dollar fee.
If not, you can exchange it to Yen inside SBI Securities for ¥0.25 per dollar fee.
To send USD to your SBI Bank account: 入出金 → 外貨出金
To convert USD to JPY inside SBI Securities: 取引 → 外貨出金 → 売却
